Strawberry Yuzu Popsicles


It’s official, popsicle season is here. Nothing like a refreshing, juicy and sweet cold treat to beat the heat. Strawberries are still in season, shining stars at the moment but run don’t walk to your nearest farmers market as they are peaking now. Strawberries are high in vitamin c, antioxidants and fiber. Technically the strawberry is not a fruit but part of the flower of the strawberry plant. Strawberries are considered the most popular fruit worldwide, brought to us by the ancient Romans. They may protect your heart, lower blood pressure and fight certain cancers. The French viewed them as an aphrodisiac. Fresh strawberries are almost at the end of the season, so hurry out and get yours soon. I also use a yuzu extract, a distillation of the bumpy textured citrus fruit from Japan.The strawberries are sweet and the yuzu lends a subtle aromatic and tangy flavor. It is a speciality item but widely available online. I added some agave nectar to make it a bit sweeter for my kids but feel free to omit it and use 4-6 drops of stevia instead. These popsicles are for all to enjoy. The are incredibly uplifting.



Makes 10 popsicles/ Preparation time 10 minutes/ Freezer time 8-24 hours

Gather

3 cups/600 grams fresh, hulled strawberries, cut in half or frozen, (make sure frozen strawberries are thawed if using)

5 teaspoons yuzu extract (found here) or lime juice

1/4 cup/ 59.147 ml dark agave nectar

1 pinch salt

1 cup/ 236.588 ml water

1 teaspoon vanilla extract



Make

Place strawberries, yuzu extract, agave nectar, salt, water and vanilla extract into the container of a high speed blender. Blend on high for about 2 minutes. Carefully fill up popsicles molds
